How to change what's permanently on my MacBook dock?

On my macbook, i've had the same icons on my dock for years. I always use the iPhoto application and the System Preferences application but I have to type their names into finder the pull them up. How do I put those icons on my dock permanently? Everytime I get them on there they disappear after I close them out! Help!
